Baked Potato with Beans and Cheese
Wash and poke a couple holes in a baker potato. Microwave until soft. Cut in half and top with 3/4 cup canned, drained beans. Top with 3 Tbs 2% reduced fat sharp cheddar, put back in the microwave to heat the beans and melt the cheese. Top with salsa.
Farro with Pesto and Spinach
Cook 1 cup raw farro according to package directions. Roughly chop spinach to make 8 cups and place the spinach and 3 tbsp. pesto. Cover and microwave 1 minute. Add cooked farro to spinach and pesto, stir.
Spinach Pesto with Tofu
Roughly chop spinach to make 8 cups and place the spinach and 3 tbsp. pesto. Cover and microwave 1 minute. Add 3/4 cup extra firm tofu (Trader Joe’s) to spinach and pesto, stir, place a portion on a plate and place plate in the microwave to warm.
