Oven Roasted Green Beans

I wish I would have discovered roasted green beans sooner. They are absolutely delicious!
And nutritious too! Green beans have recently been shown to have impressive antioxidant capacity. Research comparing the overall antioxidant capacity of green beans to other foods in the pea and bean families has found green beans to come out on top. Recent studies have confirmed the presence of lutein, beta-carotene, violaxanthin, and neoxanthin in green beans. In some cases, the presence of these carotenoids in green beans is comparable to their presence in other carotenoid-rich vegetables like carrots and tomatoes. Woohoo! Oven Roasted Green Beans

Cook Time: 15 min
Level: Easy
Serves: 6 servings
Ingredients
- 1 1/2 pounds green beans
- 2 tablespoons extra-virgin olive oil
- 1 teaspoon kosher salt
- 1/2 teaspoon freshly ground black pepper
- 3 Tbs freshly grated Parmesan (optional but recommended)
Directions
Preheat the oven to 425 degrees F.
Trim the ends of the green beans and add to a large bowl.
Toss with the extra-virgin olive oil, salt and pepper and spread out evenly on a parchment lined baking sheet.
Roast, stirring once halfway through, until lightly caramelized and crisp tender, 12 to 15 minutes.
Immediately place on serving tray and top with Parmesan.
